National Waffle Day- Healthy Recipe for the Whole Family!

Despite what you may have heard, a healthy yet delicious breakfast can be achievable. In recent years, carbohydrate foods have been deemed the enemy. However, that’s simply not true. Like with everything else in the world, there is always “good” and “bad”. Of course too much of the “bad” carbohydrates can certainly tread closely on enemy lines and should be looked at as “occasional” foods. However, aiming to make about half of your calories come from “good” carbohydrates will be beneficial to your health.
It is important to focus on eating nutrient-dense foods that contain dietary fiber combined with other beneficial nutrients. When looking at grains, switching from refined to whole grain may help reduce blood cholesterol levels and may lower risk of heart disease, obesity, and type 2 diabetes.
Even waffles can make a healthy breakfast. Here’s to National Waffle Day. Check out the tips and recipe below for more ways to enjoy one of America’s favorite breakfasts.
- Select waffles that are made with whole wheat or whole grains to increase fiber and nutrients.
- Choose fresh fruit toppings that add flavor and sweetness without adding empty calories. Choosing a mix of fruits from different color groups is a great way to offer a variety of vitamins and minerals.
- Be mindful when selecting high calorie toppings like syrup. If you can’t live without these type of toppings, consider using small amounts as these calories can add up quickly. In addition, selecting toppings that are low fat or sugar free will help decrease calories compared to full fat, full sugar options.
- Create a savory breakfast by adding an egg and sautéed veggies to or in your waffle. This can help provide extra protein and/or veggies.
MONEY SAVING TIP: Make a large batch of waffles and freezing them in individual freezer bags for a quick, easy breakfast any day of the week.

2 cups whole wheat flour 1 tbsp sugar
4 tsp baking powder ¼ tsp salt
2 eggs 1¾ cup milk
½ cup oil ½ tsp vanilla
Combine all dry ingredients in a mixing bowl and mix until well combined
Add wet ingredients and whisk until smooth
Pour onto a hot waffle iron
If your waffle iron is new you may need to spray it lightly with cooking spray
Follow directions and cooking time for your waffle iron
Top with your choice of fruit and enjoy!
